New Saucy Bird restaurant in Southport opens on Monday

A new, independent restaurant specialising in the best rotisserie chicken and local produce is coming to Southport.

The brand new Saucy Bird restaurant in Southport town centre will make feathers fly when it opens on Monday (26th October 2026), bringing something new and exciting for diners.

Situated on “the best spot on Lord Street”, the new independent business will offer ‘Rotisserie. Sauces. Social’ seven days a week.

You’ll find it in the former Bistrot Pierre / Russell & Bromley site at 377-385 Lord Street, on the corner with Nevill Street and overlooking London Square.

Saucy Bird has an enticing  special offer for the first people to try out their menu, with 50% off this Monday to Thursday (26th-29th October 2026), between midday and 8pm, when you book a table.

The owners, who hail from Southport, are excited to open their doors at such a busy time in the year, with families flocking in to enjoy October Half Term. The Books Alive! Festival (24th-31st October 2026) meanwhile is inviting visitors to explore some imaginative art installations in the town centre.

Diners at Saucy Bird are in for a treat. They can enjoy freshly roasted chicken, sourced from farms in Lancashire.

A special state-of-the-art rotisserie has been brought in from Spain.

Saucy Bird has seen the creation of 10 local jobs, with some familiar faces.

The General Manager is Mark Sloan, who has over 30 years of experience within the hospitality industry in Southport and beyond.

The Head Chef is Danny Bacha, who has an impressive resume at restaurants throughout the North West.

The Saucy Bird owners said: “We are very excited to be opening our new Saucy Bird restaurant this Monday!

“We’re excited and also relieved! We started this project on 1st June. It has taken a huge amount of hard work to get to this stage.

“We are really happy to have created something fun, new and exciting for people in Southport that you won’t find anywhere else in town.

“We are very proud of the quality of our food. Our chickens are sourced from farms in Lancashire. Our food is sourced from local suppliers, and comes in fresh each day.

“We brine our chickens for 24 hours before air-drying, then we roast them on our state-of-the-art rotisserie until juicy and golden brown!

"Our special rotisserie has been brought it from Barcelona."

“When it comes to roasted chicken, you can’t beat the way they cook it in Spain and Portugal!

“Saucy Bird will be a fun place to share great food with family and friends.  Our whole chicken is £26 and made for sharing, so it offers excellent value."

“We will also be offering what we believe will be the best Sunday roast dinners in Southport!

“You can get dishes such as ½ bird, tea-brined and basted (£18); roast sirloin of beef (£22); or roasted cauliflower steak (£14).

“All three are served with rotisserie potatoes, roasted carrots, buttered cabbage, carrot and swede mash, Yorkshire pudding and gravy. It’s the best around!

“Our drinks prices are very reasonable with a great selection of beers including Budvar, plus our own Czech beer, and a carefully curated selection of wines.

“Saucy Bird is in the best spot in Southport, on the corner of Lord Street and Nevill Street, in such an iconic building. It couldn’t be more central or more accessible.

“Our first floor has stunning views across Monument Square and Lord Street. It can seat 40 people, and is perfect for events, private functions and Christmas parties.

“It’s very exciting to see so much work happening on the £20 million restoration of Southport Pier nearby - Nevill Street is going to be very busy when the pier is back open again!

“We really want to get the message across on what we’re all about - a local, independent restaurant, with owners passionate about this town, bringing diners delicious, freshly cooked food that you won’t find anywhere else.

“We are pleased to be opening during half term week with a fantastic 50% offer for the first diners through the doors.

“Come in and give us a try - and let us know what you think!

“There has been so much excitement about Saucy Bird opening, Lots of people have popped in to say hello this week, and we have lots of bookings already.

“We are looking forward to welcoming everyone.”
